Sunday Around The Table: Garlic & Basil Pasta

It's becoming apparent to me that my blog is veering into the lifestyle category. Fashion is my number one passion, but I love to craft, cook, travel and share my stories. Often times I have something I want to share, but in the back of my mind I wonder if it's too disconnected from {mtc}'s POV. I hate labels and I hate feeling constricted. I started my blog because I wanted to fill a void in the marketplace. I didn't want to just post pictures of my clothes everyday. Although I love that aspect, I wanted to share more of who I am, and I am not just a  clothes hoarder.... I promise I have more substance ;) I also promise that everything I write about will always be Thrifty and Chic!

I want to start a weekly post about yummy and affordable recipes! I envy those bloggers who have their whole week planned out, but I am just going to start with Sundays. I feel like Sundays are the universal day for family dinners, so I thought it would be the perfect day to share my favorite recipes with you.

I happen to love to cook and I have noticed so many of my friends either don't know how or don't like to cook. I hope that through my simple and affordable recipes, I might be able to change some of them ;)

First up on my "Sunday around the table" series is Chicken-Lemon-Garlic-Basil Pasta. It's a mouthful to say and the best mouthful of pasta you've ever eaten (outside of Italy of course). I found this recipe via Pinterest, I mean how else do we find recipes these days!?! My grandma offered me an old Betty Crocker... umm, no thanks gram, I've got Pinterest :D I did however adapt the recipe, and shhh... don't tell the author, I think mine is better.

Let's Begin, Your ingredient list will need to include:
2 Chicken Breasts
4 tbsp Extra Virgin Olive Oil
3-4 cloves Minced Garlic
1 tsp Red Pepper Flakes
13.25 oz (whole box) Angel Hair Pasta
6-8 Fresh Basil Leaves
1 whole Lemon

Parmesan Cheese
Toasted Pine Nuts (My favorite are from Trader Joe's)
3 Diced Roma Tomatoes (scoop seeds out)

Begin, by preparing your chicken breast. I use the frozen breasts from the grocery store because they're really easy. Oven at 350 and 15 minutes on each side of the breast. But, you can prepare your chicken as you would normally. I like to season my chicken with copious amounts of lemon pepper and salt.

While your chicken is baking, mince your garlic. Add your extra virgin olive oil in a saute pan and lightly brown your garlic. I also like to add the red pepper flakes to the oil. Do not over cook your garlic. When it turns golden, turn the heat off and let it sit until the rest of the meal is finished.

Start your water for the pasta, but make sure the pasta is the last thing you cook. It will take less than 5 minutes to cook Angel hair, but you can start your water while you chiffonade your basil (fancy word for chop thinly).

When your chicken is cooked all the way through, cut it into cubes or shred it. I like to heat the olive oil back up and add the cooked chicken, to infuse all the flavors.

Once your pasta is cooked and drained, add the garlic-pepper-olive oil and chicken. Then, squeeze the juice of one lemon over the pasta, and stir in the chopped basil. Combine thoroughly,  and make sure all the pasta is coated with oil. If the pasta appears too dry, just add a little more olive oil. Make sure to taste the pasta to ensure you have enough salt and pepper before serving.

I like to serve my pasta topped with diced Roma tomatoes, Parmesan cheese and pine nuts (I am obsessed with pine nuts).

If you are vegetarian, you can simply leave out the chicken, the original recipe I found did not call for it. I have also made this exact same recipe with salmon too!
